If there is no time to cook then plain old Eggs can be used to cook up a quick and easy meal in a jiffy.

Ingredients

  1. Onion 1 Medium Sized Diced
  2. Tomato 1 Diced
  3. Turmeric (Haldi) 1/2 teaspoon
  4. Red Chilli Powder 1/4 Teaspoon
  5. Salt to Taste
  6. Coriander Powder 1 teaspoon
  7. Fresh Coriander – Chopped 2 Tablespoons
  8. Tomato Sauce 1 tablespoon
  9. Oil 1 Tablespoon
  10. Butter 1 tablespoon

Preparation

  1. Take a Non Stick Pan and put on medium heat.
  2. Add 1 tablespoon of oil.
  3. Add the Diced Onion and saute for 2 minutes.
  4. Add the Red Chilli Powder and stir.
  5. Add the Turmeric Powder and stir.
  6. Break the Eggs and pour into the pan directly.
  7. Stir briskly .
  8. Add the Coriander Powder.
  9. Add the tomato sauce.
  10. Add Butter and stir.
  11. Add the diced tomato and stir.
  12. Take it off the heat.

Garnish with Fresh chopped Coriander.

Enjoy with Roti or Naan.
You can also put it on a toasted bread and enjoy with tea or coffee.

Tips:
To add variation you can add a diced shallot while cooking.
