Gajar Ki Kanji or Carrot Kanji Recipe

Learn how to make Gajar(Carrot) Kanji. Kanji is a fermented drink made from Gajar(Carrot) which is very tasty and tangy.

 

Ingredients

 

  1. 1 kg carrots ( Black coloured or Red)
  2. 2 teaspoons Rai Dana ( Mustard Seeds)
  3. 4 teaspoon salt.
  4. 2 teaspoon red chilli ( less or more according to your taste)
  5. 5 Pudina Leaves ( Mint leaves)
  6. 4 litre water

Preparation

 

  • Wash and scrape the carrots lightly.
  • Cut the carrots in 1 inche long pieces.
  • Take the mustard seeds and dry grind them in a mortar and pestle.
  • Take a mixing bowl and add mix the carrots with salt, red chilli, Mustard Seeds. ( Take a steel bowl or heat proof mixing bowl, otherwise it will crack)
  • Take 4 litres of water and bring to boil.
  • Now add the hot water in the mixing bowl.
  • Let this mixture cool down.
  • Add this mixture on cooling into an airtight wide mouth jar or bottle.
  • Now keep this bottle in the sun for 5 days, during the day just shake the bottle once or twice. ( Each night bring in the bottle and keep at room temperature. )
  • After 5 days keep this bottle in the fridge.
  • Serve chiiled with some mint leaves.

 

You can also add some beetroot instead of Carrot, which will give it a lovely dark colour. Traditionally black carrots are used to make the kanji which are available in North India. But you can also use the Red Carrots which you get everywhere in the world.
