Kurkuri Bhindi (Crunchy Okra or Lady Finger)

  1. Bhindi (Lady Finger) 250 grams
  2. Amchur (Mango Powder) 1/2 teaspoon
  3. Chaat Masala 1/2 tea spoon
  4. Red Chilli Powder 1/4 tea spoon
  5. Garlic/Ginger Paste 1 teaspoon
  6. 1 Onion cut into larger pieces.
  7. Salt to taste
  8. Cooking Oil


  1. Wash and pat dry the Bhindi with a cloth. ( Drying with cloth helps to get rid of the small thorny things on the top of the Bhindi)
  2. Cut the heads off the Bhindi
  3. Cut the bindi into small pieces
  4. Tale a pan and add some oil in it
  5. Add bhindi pieces
  6. Just stir it around once or twice. (Bhindi should not be stirred too much)
  7. Add the ginger/garlic paste.
  8. Stir occassionaly.
  9. Add the onions.
  10. Stir occassionaly.
  11. Once the onions start getting blackish add the Turmeric(Haldi)
  12. Add Red Chilli powder.
  13. Add Salt as per taste.
  14. Mix well.
  15. Let it cook for 5 minutes, you can cover the pan partially.

Tips :Sprinkle some Chaat Masala on top.

Serve with Roti or Naan.
