Achari Paneer – Spicy Paneer with a ting of Pickled Flavour to tickle your taste buds.

Ingredients

For Marinade.

  1. Ginger Paste 1/2 tablespoon
  2. Garlic Paste 1/2 teaspoon
  3. Red Chilli Powder 1 teaspoon
  4. Haldi (turmeric powder) 1/2 tsp
  5. 1 tablespoon oil
  6. salt as per taste

Achari Masala Ingredients

  1. Jeera (Cumin Seeds) 1/4 teaspoon
  2. Rai (Mustard Seeds) 1/2 teaspoon
  3. Methi Dana ( Fenegreek seeds) 1/4 teaspoon
  4. Saunf ( Fennel Seeds) 1/2 teaspoon
  5. Kalonji (Onion Seeds) 1/4/ teaspoon
  6. Heeng ( Asafeotida) 2 pinches
  7. Oil 1 tablespoon

Other Ingredients

 

  1. Paneer(cottage cheese or you can also use Firm Tofu) 2 cups – cut in small cubes.
  2. Dahi(Yoghurt) 1/2 cup
  3. Onions finely diced 1/2 cup
  4. Ginger Paste 1/2 tablespoon
  5. Garlic Paste 1/2 teaspoon
  6. Green Chilli chopped 1 teaspoon
  7. Garam Masala 1/2 teaspoon
  8. Amchur ( Dried Mango Powder) 1/2 teaspoon
  9. salt as per taste
  10. Fresh Coriander chopped finely 2 tablespoonsOil, for deep frying

 

Preparation
Marination

  1. Take a small bowl.
  2. Add all the Marinade ingredients including the oil and mix well.
  3. Add the pieces of paneer in the mixture and mix well by hand.
  4. Keep it aside for 30 minutes.

Cooking

 

  1. Take a frying pan and pour the oil for deep frying.
  2. Add the paneer and fry it till crispy and keep aside on some tissue paper to drain the excess oil.
  3. Take a heave bottom pan and put it on medium heat.
  4. Add 1 tablespoon of oil.
  5. Add Rai and let it crackle.
  6. Add the Heeng .
  7. Add the Methi Dana(Fenugreek Seeds)
  8. Add the Jeera(Cumin Seeds)
  9. Add the Saunf(fennel seeds).
  10. Add the Kalaunji (Onion Seeds)
  11. Add the garlic paste and stir the garlic paste so that it gets mixed in the oil and starts to change colour..
  12. Add the ginger paste and stir to mix it well.
  13. Add the onions and stir well for 2 minutes.
  14. Add the turmeric powder and stir for 2 minutes.
  15. Add the Garam Masala and stir till the onion mixture has been cooked.( you will see the oil oozing out from the onion mixture )
  16. Add the Amchur (Dried Mango Powder).
  17. Add the salt as per taste
  18. Add the yoghurt now and stir.
  19. Now add the fried Paneer and mix well.( You can choose not to fry the paneer and simply add the marinated paneer and cook for 5 minutes in the gravy)

While serving add some fresh and chopped coriander on top.
You can also add some fresh cream on top if needed while garnishing.

 

 

Enjoy it with Roti, Naan or Rice
