Dum Alloo is originally a Kashmiri Dish. The small sized potatoes are deep fried and then cooked in a sauce on low heat. Different versions of this are cooked in each part of India.

Ingredients

  1. Potatoes  small sized 8
  2. Oil 250 grams for frying
  3. Red Chilli Paste 1 teaspoon
  4. Red chiilies whole 4
  5. Garlic Paste 1 teaspoon
  6. Ginger Paste 1 tablespoon
  7. Jeera Powder 1/2 teaspoon
  8. Salt to taste
  9. Tomato Puree 4 tablespoons
  10. Cinnamon Powder 1/4 teaspoon
  11. Clove Powder 1/4 teaspoon
  12. Saunf ( Fennel Seed) Powder 1.5 teaspoons
  13. 1 Onion medium sized , make a paste in a blender.
  14. Green Coriander finely chopped 1 tablespoon
  15. Water 1 cup

Preparation

  1. Peel the potatoes and deep fry and keep aside. Do it on medium so that the potatoes are cooked well and do not get burnt. Keep aside.
  2. Now take a frying pan and add two tablespoons of oil
  3. Add the Red chillies and Garlic, Ginger paste
  4. Add Jeera Powder
  5. Add red chilli powder( optional)
  6. Add Saunf (Fennel Seed )Powder
  7. Add Cinnamon Powder
  8. Add Clove Powder
  9. Stir for few minutes
  10. Add the Onion Paste
  11. Let it cook for 5 minutes, till the onion paste is cooked.
  12. Add Tomato Puree and cook for 3 minutes
  13. Add water if needed. This is a semi dry recipe and does not need much gravy.
  14. Add the salt as per taste
  15. Now poke the potatoes a bit with fork and then put them in the gravy
  16. Now cover the pan and then let it cook on slow for 15 minutes
  17. Add the almond paste and stir for a minute.

Optionally Add some fresh cream while serving, garnish it with fresh coriander

Serve it with rice, Naan or Roti
